Baglio: In Aragonese Sicily in the 16th century, the Baglio (in Sicilian: u' Bagghiu) was the courtyard with the entrance arch. The lower floors of the structure were intended for the homes of peasants and livestock, while the upper floors housed the lodgings of the nobility. For our dishes, we select KM0 raw materials, simple but equally unique, from tasty and tender meats coming from local farms to delicious porcini, basilisk and country mushrooms, from fresh and mature cheeses produced by the ancient workers of local sheep farming, above all the fresh ricotta and Madonie provola, cured meats, strictly seasonal field vegetables, Manna, made almost exclusively in the Castelbuono – Pollina area, Polizzi's "bad" bean (slow food praesidium), local olive oil to bread and fresh hand-made pasta, made exclusively with local wheat flours.
